I have a R60/Thinkpad with XP Pro and 1GB Ram that works like a charm. I un-installed Adobe 6 and Adobe Reader 8 today (too much space, but no issues as such) and installed Foxit Reader.

All sorts of wired things started happening....

Mainly this has to do with Windows GUI concerning the desktop (not being able to open folders or My Computer, items missing in right click, task bar not responding, etc.). At times I can't launch the Task Manager or it launches with "missing" elements.

These issues start to appear after some time following rebooting, but inveriably I have to reboot again to get some sanity.....

Any idea?!??!

Have you tried using System Restore (in XP)? Also, it is very important that you properly removed ALL traces of Adobe Acrobat and Reader-they do have issues and can be hard to remove certain components (mainly Registry entries). Your machine's spec's are fine.
When you attempt the Restore-do so from SAFE Mode. Again, make sure that you restore to a date before the change. Do not reinstall Acrobat.
You may be forced to do a "Repair" install of Windows. This will not remove your data if done correctly.
Hope this helps

After uinstalling adobe, it's better to reboot your computer before installing other software. Also, I agree with jc836, restore is probably an easy way to get rid of it.
